Just wondering what someone would suggest for a good amp to use with the General Lee radio?

There's many that would work well, it boils down to how much you want to spend and what time and money you want to invest in the install.

Something simple: KL203, run radio at 1.5-2w carrier (low power) and it should do 125w+ with minimal installation.

I have the General Longstreet, which is the sideband brother of that radio. I drive that into a texas star 350hdv. I get a dead key of 190 with a swing to 300 all day with no problem.
