Matt, It depends on what resistor and where in the circuit it is. Resistor generally don one of two things and sometimes both at the same time. They either reduce a voltage being supplied to a component so tnat it can be run from a higher voltage source than it needs, and/or they limit the current flowing in the circuit. Now woithout getting too technical some components like transistors and IC need to see certain voltages on certain pins in order to work. Changing those voltage can change the way that the device works right upto the point of self destruction if you increas the voltage too much or shutting down is reduced below the required value.
